Coho Salmon Fillets
Make sure you start off with a great fillet.  This recipe is really, VERY simple, with nothing more than oil, salt & pepper.  So the most important part of preparing this dish is to make sure you’ve got a fresh fish. Since the flavor was so simple, I decided to add a squeeze of lemon juice, and serve it on a bed of mixed greens. Ingredients 2 (6-ounce) coho salmon fillets,...

Too much cow is bad for you
Federal study suggests eating too much beef can be hazardous to your health.  Beef is and always will be an American tradition, and it will never leave the dinner table for good.  However, reducing the amount of red meat in our diets can help lengthen our lives.      A 10-year study by the Archives of Internal Medicine recorded the diets of 545,000 people between the ages of 50 and 71.  They...

Pasta Tips
1.  SALT your pasta. Many people are unaware that the boiled water should be generously seasoned with salt as to enhance the pasta’s flavor.  Do not add salt until the water is boiled, for two reasons: 1) Unsalted water has a lower boiling point than salted water, making everything faster.  2) Salt dissolves faster in hot water.  Un-dissolved salt crystals in cold water can mar the surface...

Linguine with Shrimp
Accompany this dish with a leafy salad to balance out the creaminess.  It will be quite filling, so don’t overload your plate…like I did lol. NOTE: Al dente (ahl-dan-teh) is the Italian phrase meaning “to the tooth” which means the pasta should be tender but still firm with you eat it, with a slight chewy resistance. Opaque means not translucent, such that a raw,...

Braised Chicken with Mushrooms
I prepared this dish while my parents were out of town for my sisters.  Since none of us were 21, I couldn’t purchase the Madeira or dry sherry that the recipe calls for, so i substituted it with apple juice.  I definitely recommend using the alcohol if it’s available, but if not apple juice still works (not as tasty though, but still delicious).  This can be served with egg noodles,...

Cheap Parchment Paper....No.
Parchment paper can always come in handy when baking.  It cleans up much more efficiently, but…what if you have cheap parchment paper?  The stuff that sticks on to baking sheets after coming out of the oven, and leaving a coat of dried melted wax for you to scrub off?  Ahem, NO WAY.  Don’t make yourself go through with that, you don’t deserve it.  You might as well use...

Oatmeal Raisin Cookies
Let’s start simple.  I guarantee these will be the best if not one of the best oatmeal cookies you’ll ever taste (when they’re fresh, of course) But you can always revive them in a toaster oven to regain that crunchy outside with the soft, steamy inside. NOTE: You can always substitute the raisins, maybe add an ingredient like bananas.  I try not to alter too much from a...

Fresh start...hello hungry world
I see many people using Tumblr nowadays.  I thought it was about time I started.  Most people write about their social lives, school, drama, friends, etc.  Unfortunately, I don’t think My social life is interesting enough to blog about.  The two main assets that apply to me are my love for Disney, and my love for cooking.  So I decided…I will write a cooking blog.  This is for all...
